Fiery Bean Soup

A delicious tomatoey soup with added chilli heat

This is such a simple soup, made from beans, tomatoes and a fiery combination of cayenne pepper and cumin. Combined with a zesty squirt of lime and the salty crunch of tortilla chips, it makes a wonderful winter warmer! Did I mention that it's vegan?!

Cooking Time: 40 mins

  • 1 tbsp rapeseed oil
  • 1 large onion, finely chopped
  • 1 garlic clove, crushed
  • 1 tbsp tomato purée
  • 1 tsp ground cayenne pepper
  • 1/2 tsp ground cumin
  • 400g tinned chopped tomatoes
  • 200ml water
  • 500ml vegetable stock
  • A pinch of sea salt
  • 400g tinned mixed beans
  • 1 red bell pepper, diced
  • 1 lime, cut into quarters
  • 200g salted tortilla chips

  1. Put the oil in a large, deep pan and place over a medium heat. Add the onion and cook until tender, being careful not to burn it.
  2. Add the tomato purée and garlic and stir continuously for one minute. Add the cayenne pepper and cumin and stir until the onion is evenly coated.
  3. Add the chopped tomatoes, water and sea salt, and stir well. Then add the vegetable stock, stir again, and simmer for 15 minutes.
  4. Using a hand blender, blitz the soup base until it is smooth and there are no pieces of onion or garlic remaining.
  5. Add the beans and red bell pepper, then simmer for 15 minutes.
  6. Serve in bowls with a squirt of lime and 50g of the tortilla chips per serving.
